It would be sacrilege to visit Cordoba and not try their refreshing quintessential cold soup dish called salmorejo. It is so cherished there is even an alleyway named after it. It would be difficult to find a bar in Cordoba that does not have this heralded dish on their menu. It is similar to a cold Gazpacho but much creamier and thicker in texture. It is a welcome dish on a hot summer’s day in Cordoba.
